The Ribisch winery is a typical, mixed wine and arable farm, now in its third generation. It is located in Paasdorf, a traditional wine village in the heart of the Weinviertel. The winery is known for its dry, fruity and spicy wines such as the Weinviertel DAC, but other varieties such as Welschriesling, Rheinriesling, Pinot Blanc, Zweigelt and Blauburger are also vinified in a variety of ways. The vineyards of the Ribisch estate extend across Paasdorf and Atzelsdorf. The very different soils, which range from slightly sandy with a high proportion of sandstone to very heavy clay soils, the southern orientation of the rows of vines and the careful manual work involved in tending the vines result in grapes of the highest quality. These grapes are then carefully processed and bottled in the cellar. After several hours of chilled maceration, the white wines are classically fermented and stored in stainless steel tanks. The red wines, on the other hand, ferment slowly on the skins and then mature in steel tanks or barrique barrels, depending on the ageing stage.
